Vegan Chickpea Pasta

  Ingredients: (Serving Size 2)

 

Chickpeas
20 Kalmata Olives
2 Red Chili
4 Garlic Cloves
Parsely
Olive Oil
1. Boil chickpeas in water until tender.
2. Drain chickpeas then put in a blender with a pinch of salt.
3. Get your pasta machine, fill it with chickpeas mixture and start grinding out some pasta (about two cups worth)!
4. Boil pasta for about 30 minutes.
5. Drain and sauté in olive oil with garlic and chili.
6. Transfer to bowl; add a tablespoon of extra virgin olive oil , olives and bunch coriander parsley
