Vegan Couscous Salad

Ingredients: (Serving Size: 2) 
I cup Pearl couscous
I bunch mint 
20 black olives
4 lemons, halved
15 plum tomatoes, halved 
Pinch salt 
 2 Tbsp pine nuts
1. Boil 1 Cup of Pearl Couscous
2. Cut Olives, Tomatoes and half Lemons
3. Squeeze Lemons and put juice in a seperate bowl
3. Gather Couscous, chopped Mint, Olives, Tomatoes and Pine Nuts
4. Mix all together with lemon juice and a pinch of salt
ENJOY!!
